Ingredients: 1½ lbs boneless (skinless chicken thighs, cut into bite-sized pieces - approx 8 thighs); 1 teaspoon garlic powder; ½ teaspoon ground cumin; ½ teaspoon dried oregano; 1/2 tsp Salt and; 1/4 tsp black pepper (to taste); 1 can (15 oz black beans, rinsed and drained); 1 can fire roasted tomatoes - drained; 1 cup red enchilada sauce - 215 ml 1 jar; ½ cup salsa; 6 small white corn tortillas (sliced into 1-inch strips); 1 cup shredded Mexican blend cheese; can just use 1-2 Tbsp taco seasoning instead; Sour cream; Diced green onions; Chopped avocado; Diced tomatoes
